Sausage & Rice Jambalaya (Good ol' southern taste) 

2 pkgs. (16 oz. each) Regular Flavor Uplands Gourmet Pork Sausage 
1/2 lb. smoked sausage, sliced in 1/4" rounds 
2 cans (14.5 oz. each) Cajun style stewed tomatoes 
1 can (15 oz.) black beans, drained 
1 cup water 1/4 teaspoon Louisiana Hot Sauce 
1 bay leaf 
1-1/3 cups instant rice 
1/4 cup thinly sliced green onions (optional)

In large saucepan or Dutch oven, cook Regular Flavor sausage over medium high heat, stirring frequently until no longer pink. Add sliced smoked sausage and continue to cook, stirring frequently 5 more minutes. Add tomatoes, black beans, water, hot sauce and bay leaf. Bring to a boil; reduce heat to low and simmer 30 minutes. Return to a boil, stir in rice, remove from heat and cover. Let stand 15 minutes before serving. Garnish with green onions if desired.
