Sausage Rice Creole (So soulful it makes you want to sing the blues) 

4 pkgs. (16 oz. each) Regular Flavor Uplands Gourmet Pork Sausage, cooked, crumbled and drained 
1 can (28 oz.) whole peeled tomatoes, undrained 
1 green pepper, diced 6 green onions, sliced, with green parts set aside 
1 teaspoon black pepper 
1 cup uncooked long-grain rice 
1-1/2 cups water or stock 
Creole or Cajun seasoning or seasoned salt (optional) 

In large saucepan, cook sausage over medium high heat, stirring frequently until thoroughly cooked and no longer pink. Add tomatoes, green pepper, white part of onion and black pepper. Use spoon to chop tomatoes into bite-sized pieces. Bring to a boil; cover and simmer on low heat for 10 minutes. Add rice and water, return to a boil; reduce heat to low. Cover and simmer 20-25 minutes or until rice is tender. Remove from heat, stir in green onions and optional seasoning to taste; cover and allow to rest 5 minutes before serving.
