Sausage Joes (Some like it hot!) 

2 pkgs. (16 oz. each) Regular Flavor Uplands Gourmet Pork Sausage 
1 cup finely chopped onion 
1/2 cup finely chopped green pepper 
1/4 cup tomato sauce 
1/2 cup chili sauce 
2 teaspoons Worcestershire sauce 
6-8 sandwich buns 
4 oz. (1 cup) shredded sharp Cheddar cheese (optional) 
1/4 to 1 teaspoon hot pepper sauce, to taste (optional) 

Cook sausage, onions and peppers in a large skillet over medium-high heat, stirring frequently until sausage is finely crumbled and no longer pink. Add tomato sauce; cover and cook 1 minute more. Stir in chili sauce and Worcestershire; Remove from heat; season to taste with hot pepper sauce if desired. Spoon mixture onto bun bottoms; sprinkle with cheese if desired. Add bun tops; serve warm.

Makes 6-8 servings

Cook's Tip: the Sausage Joe is a hand-held sandwich. For a "sloppier" open-faced version, add water, chili sauce or tomato sauce as desired and adjust seasonings to taste.
